Passover Style Meals Available All Week

Dining Services has the following options available for students celebrating Passover this week.

In our Places & Markets:
  • sparking juices
  • macaroons
  • matzah
  • matzo ball soup
  • regularly stocked plethora of Kosher items
In our Residential Dining Restaurants:
  • A Passover-style station each day
    • Today's Passover-style meals are Rosemary Chicken for lunch and Herb Crusted Tilapia for dinner
  • matzah

Whole Grains Challenge Month



Dining Services is participating in the Whole Grains Challenge this month -- are you?

Dining is offering daily whole grain foods:


  • Sundays - whole wheat pancakes

  • Mondays - popcorn

  • Tuesdays - whole wheat pastas

  • Wednesdays - whole grain bread

  • Thursdays - assorted whole grains (quinoa, wild rice, brown rice)

  • Fridays - assorted corn choices

  • Saturdays - oatmeal

In addition, the Places & Markets are featuring their daily whole grain choices as well. Look for whole grain displays and/or ask a manager for help finding the whole grain choices.


Why whole grains, you ask? Whole grains, like fruits and veggies, contain tiny but mighty antioxidants and phytochemicals. These antioxidants and phytochemicals fight disease. So many times we focus on what we shouldn't eat...it's far more effective and enjoyable to focus on what we should be eating. Whole grains? You should be eating them! John's Market - New to Muir College














Muir College has a new market where you can use your Dining Dollars, Triton Cash, credit or cash to purchase specialty coffee drinks, assorted beverages, milks, groceries, snacks and supplies. John's is located on Muir College just south of Pines restaurant. There is outdoor seating to use while you enjoy your latte and scone in between classes.





John's is open now!




Hours are Mon-Fri 7am-1am and Sat-Sun 9am-1am

Can Chewing Gum Help You Maintain a Healthy Weight?



I am a life-long gum devotee. When I was a kid, I could chew through packs of Hubba Bubba and Bubblicious like nobody's business. I have fond memories of going with my dad to a local convenience store called Lucky's where I could gaze upon the huge display of candies and gums. He would let me pick out a pack or two and would often say, "don't tell your mother."



Anyway, 20-some years later I still enjoy at least one piece of gum following every meal and wonder what sort of role regular gum-chewing has on eating habits and weight management. There have been some studies to suggest that gum-chewing has an effect on digestion or can help with maintaining weight and staving off cravings.



A recent and rather small study published in the journal, Appetite, and paid in part by Wrigley (the gum company) looked at the "Effects of chewing gum on short-term appetite regulation in moderately restrained eaters." Check out the Abstract: http://www.ncbi.nlm.nih.gov/pubmed/21718732


In this study, gum chewers (45 minutes at a time) ate slightly less and reportedly had better satiety through suppressed appetite and craving levels.


Dentists would surely recommend sugarless gum but for some people the artificial sweeteners can cause gastrointestinal symptoms. So, it's up to you. I will continue my gum obsession.

Hot Trend: Greek Yogurt


It's nearly impossible to watch a half-hour of television without seeing a commercial for some kind of Greek yogurt. What's all the fuss about this kind of yogurt? It's hard to say for sure why Greek yogurt is such a hot trend but it has been around for centuries and is traditionally made using a straining process that removes the whey from the yogurt. Traditional Greek yogurt is higher in fat than most other yogurts and can therefore have a smoother, creamier mouthfeel. There are MANY different varieties of yogurts labeled as Greek yogurt on shelves in the U.S., though - so check the nutrition facts labels for what you want to know.

In general, yogurt remains a hot trend in food because it contains live, active bacteria cultures and the concepts of probiotics and even prebiotics are subjects of much research. It'll be interesting to learn what these healthy little critters might be able to do for human health in the future. In addition, yogurt is another way to get calcium and a little protein.

In the meantime, if you're into yogurt or Greek yogurt (pictured above: Greek God brand Greek yogurt in Roger's Place on Revelle College), you will find plenty of options in Dining Services restaurants and Places & Markets. In the restaurants, you will find yogurt on the Fruit and Yogurt bars everyday. In the Places & Markets, you will find a variety of yogurts in individual servings.

Get Well Boxes now available at Places & Markets

Places & Markets have "Get Well Boxes" available for you or your roommates or friends who get sick during the quarter. The Get Well Box contains: a bottle of water, a Gatorade, Kleenex, Soup at Hand, crackers, applesauce, spoon and straw. These items are meant to be soothing and/or easy on the stomach.
Remember to wash your hands frequently to help prevent the spread of illness. But if you do get sick, take care of yourself, stay hydrated and take it easy!

From October 6-22, 2010, UC San Diego is participating in the Colleges Rock Hunger food donation competition against SDSU, CSUSM and USD. Colleges Rock Hunger is the kick-off food drive for the holiday season, providing nourishment for San Diego families in need. The college donating the most pounds of food will win.

Use Your Noodle!

March is National Nutrition Month and National Noodle Month! Here is a recipe made entirely with ingredients that you can purchase at Dining's Places & Markets:

Ingredients:
2.5 tbsp olive oil
1 box pasta
2 cups chopped tomatoes, any kind
2 tsp minced garlic
salt and pepper to taste
1 cup torn fresh basil
parmesan cheese to taste

Directions:
1. Cook the pasta according to directions.
2. As pasta cooks, heat the oil in large skillet over med-high heat. Add tomatoes, cook for 5 minutes.
3. Add garlic, salt and pepper. Reduce the heat to med-low and continue cooking, occasionally stirring, while pasta finishes cooking.
4. Drain pasta and pour it into serving dish.
5. Add basil to tomato mixture and toss.
6. Spoon tomatoes and basil over pasta and serve.
7. Add parmesan cheese to taste.
