I love the huge variety of meals that you can create out of the salad bars in Dining Services' restaurants. This breakfast is from Canyon Vista's salad bar. It's fruit (grapes, cantaloupe, melon, dried apricots) and cottage cheese with a glass of nonfat milk. It's healthy, quick and tasty.
This delicious quesadilla was from Plaza Cafe's (Revelle College) Meatless Monday at the Grill on 1/11/10. It is a whole wheat tortilla with cheese, red pepper, and black bean burger. I ate it with lots of fresh salsa and some jalapenos!

I am a big fan of appetizers, tapas and snacks of all kinds. Sometimes I like to make a meal out of what other people consider to be snacks. For example, this "snack meal" was something I picked up at Goody's Place. It's fresh fruit (melons, cantaloupe, apples, grapes, pineapple) and some salty mixed nuts. The mix of sweet and salt was delicious. I had a handful of the nuts and saved the rest for later. This meal was pretty light because I had it after a fairly large breakfast. Listening to your body's cues on how hungry you really are is key to maintaining a healthy weight. You might not need a full meal just because it's lunch time. Listen to your body!
I love the new restaurant Goody's on RidgeWalk (TMC.) There are so many variations and combinations that you can make with the ingredients for burritos, burrito bowls and salads on the Latino side. Each combo has a different flavor and nutrient profile. Here is my delicious burrito bowl with rice, black beans, fajita veggies, lettuce, pico de gallo, corn and guacamole. I also had a fruit cup for some extra nutrition and color. And this meal is vegan!
College students are notorious for skipping breakfast. I am sure you have heard many times how important it is to eat breakfast for your energy level and academic performance. Believe it! Here is one of my favorite breakfasts: the fruit and yogurt parfait from Plaza Cafe. You can also get these at OVT or make your own from the fruit and yogurt bar at each Dining restaurant.
These parfaits are healthy and very easy to grab on your way to class.
