Passover

Dining Services' Places & Markets are carrying assorted foods for Passover, including matzah, matzo ball soup, potato pancakes, macaroons and grape juice.

There will also be special chocolate macaroons in the Dining restaurants this Friday, 4/2/10.

Happy St Patty's Day!

Ah, the humble potato. A medium potato has about 160 calories, 0g fat, 37g carbs, 4g fiber, 4g protein and is a good source of vitamin C and potassium.

Here are 3 different varieties of potatoes from the Produce Patch at Foodworx (Sixth College.) The larger varieties are only $0.95 each and the smaller ones are 5 for $1.00.

Good Luck with Finals! Numi, New You.

Dining Services restaurants now serve Numi tea, which comes in a variety of flavors. Tea is a great beverage alternative to sugary, high-calorie sodas and juice drinks.

A nice, hot cup of tea can soothe a stressed out student. Tea even contains anti-oxidants!

You can get hot water on the side of the coffee dispensers in Dining restaurants. Then you can steep your tea for about 3 minutes.

Tuscan Chicken with Tomatoes and White Beans

Here is the Tuscan Chicken with Tomatoes, White Beans and Basil from Canyon Vista restaurant on Warren College.

Nutrition Facts for this dish:
  • 220 calories
  • 6g fat
  • 2g fiber
  • 35g protein

I had steamed broccoli, cauliflower and carrots on the side and spiced it up with a few jalapenos.

Use Your Noodle!

March is National Nutrition Month and National Noodle Month! Here is a recipe made entirely with ingredients that you can purchase at Dining's Places & Markets:

Ingredients:
2.5 tbsp olive oil
1 box pasta
2 cups chopped tomatoes, any kind
2 tsp minced garlic
salt and pepper to taste
1 cup torn fresh basil
parmesan cheese to taste

Directions:
1. Cook the pasta according to directions.
2. As pasta cooks, heat the oil in large skillet over med-high heat. Add tomatoes, cook for 5 minutes.
3. Add garlic, salt and pepper. Reduce the heat to med-low and continue cooking, occasionally stirring, while pasta finishes cooking.
4. Drain pasta and pour it into serving dish.
5. Add basil to tomato mixture and toss.
6. Spoon tomatoes and basil over pasta and serve.
7. Add parmesan cheese to taste.

LiveWell Meals are RD-approved

This delicious, vegetarian dish (LiveWell Soba Noodles with Vegetables) was from Plaza Cafe on Revelle College. Everyday, all 4 full-service dining halls have a LiveWell dish at lunch and dinner. (That's Plaza Cafe, OVT, Cafe V and Canyon Vista!)
LiveWell meals are healthy, RD-approved meals that help you make a healthy choice at meal time.

Hass avocados are sold in the Produce Patches at Dining's Places & Markets. In Dining restaurants, avocado and guacamole are available everyday at the deli station and frequently included as part of the daily specials. And you can get guacamole on your burrito, salad or bowl at Goody's.
