Beyond the Burrito at Goody's

Did you know that Goody's has fresh sandwiches and salads?

You probably know by now that Goody's burritos are awesome. The "other side" of Goody's also has some healthy and delicious meal options. Check out my incredible Grilled Vegetable sandwich from the deli side of Goody's. It's over-flowing with nutritious veggies and flavor!

Fine Dining Lunch every Wednesday at Plaza Cafe

Plaza Cafe has a Fine Dining lunch every Wednesday. It's a great way to enjoy a fancy meal from Dining Services, complete with tablecloths, sparkling water, linen napkins, and a host who clears your plate!

This Fine Dining lunch was delicious! I had a vegetarian tomato & gorgonzola cheese tart with some beautiful sauteed veggies (Napa cabbage, asparagus, assorted peppers, mushrooms.) I also had a pear since my obsession with this fruit continues. I LOVE a good pear.

I like my eggs cage-free

I have always loved breakfast food, especially scrambled eggs. All the eggs used in Dining Services are cage-free. This plate is my breakfast of cage-free eggs & spicy homemade salsa, a vegetarian sausage patty, and red grapes.


Hey you, Breakfast Skipper!

Even if it's a small bite (a glass of milk, a piece of fruit), try to eat a little something within about an hour of waking. Breakfast eaters perform better academically! (And have better long-term weight maintenance.)

Fresh2U is fresh to me

Grilled chicken, cucumbers, artichokes, onions, tomatoes, olives, feta cheese on a bed of greens - YUM! I picked up this Greek Chicken Salad from Cafe Ventanas' - it's part of the Fresh2U menu.

Breakfast Burrito - Size Matters

I love breakfast burritos. The mix of beans, egg and cheese and tortilla in this vegetarian burrito is a warm and hearty breakfast treat. The key with breakfast burritos is to keep it small. The Valu4U-sized breakfast burrito is best - and it's only $1.95!

I also had a tasty green apple for some crunch.

Looking for a treat? Dining Services' locations have healthy frozen juice drinks called Swirl. It's made with 100% fruit juice and comes in all kinds of fun flavors. Swirlite is lower in calories because it's sweetened with Splenda.

Drink slowly or risk the dreaded brain freeze!!!

Breakfast from the bar (salad bar, that is)

I love the huge variety of meals that you can create out of the salad bars in Dining Services' restaurants. This breakfast is from Canyon Vista's salad bar. It's fruit (grapes, cantaloupe, melon, dried apricots) and cottage cheese with a glass of nonfat milk. It's healthy, quick and tasty.

Meatless Mondays!




This delicious quesadilla was from Plaza Cafe's (Revelle College) Meatless Monday at the Grill on 1/11/10. It is a whole wheat tortilla with cheese, red pepper, and black bean burger. I ate it with lots of fresh salsa and some jalapenos!

Snacks for lunch




I am a big fan of appetizers, tapas and snacks of all kinds. Sometimes I like to make a meal out of what other people consider to be snacks. For example, this "snack meal" was something I picked up at Goody's Place. It's fresh fruit (melons, cantaloupe, apples, grapes, pineapple) and some salty mixed nuts. The mix of sweet and salt was delicious. I had a handful of the nuts and saved the rest for later. This meal was pretty light because I had it after a fairly large breakfast. Listening to your body's cues on how hungry you really are is key to maintaining a healthy weight. You might not need a full meal just because it's lunch time. Listen to your body!

Goody's, so good!



I love the new restaurant Goody's on RidgeWalk (TMC.) There are so many variations and combinations that you can make with the ingredients for burritos, burrito bowls and salads on the Latino side. Each combo has a different flavor and nutrient profile. Here is my delicious burrito bowl with rice, black beans, fajita veggies, lettuce, pico de gallo, corn and guacamole. I also had a fruit cup for some extra nutrition and color. And this meal is vegan!

Break Fast in the morning!




College students are notorious for skipping breakfast. I am sure you have heard many times how important it is to eat breakfast for your energy level and academic performance. Believe it! Here is one of my favorite breakfasts: the fruit and yogurt parfait from Plaza Cafe. You can also get these at OVT or make your own from the fruit and yogurt bar at each Dining restaurant.

These parfaits are healthy and very easy to grab on your way to class.

And yes, I did take a photo of the parfait with my picture in the background. Just having fun!
